Ingredients

  • 1 cup frozen pineapple chunks
  • 1 packed cup chopped kale, tough stems removed
  • 1 medium ripe banana
  • 3/4 cup unsweetened coconut milk
  • 1 tablespoon fresh lime juice
  • 1/2 cup ice, optional
  • 1 to 2 teaspoons honey or maple syrup, optional

How To Make It

Wash the kale well and remove any thick stems. If you are using curly kale, give it a rough chop so it blends more easily.

Add the coconut milk and lime juice to the blender first. This helps the blades move smoothly and keeps the greens from sticking at the bottom.

Add the chopped kale, frozen pineapple, banana, and ice if you want a colder, thicker smoothie. Blend on high for 45 to 60 seconds, or until the mixture looks smooth and bright green.
