Crispy Air Fryer Gnocchi With Pesto and Parmesan

Golden, crisp-edged gnocchi, fragrant basil pesto, and a snowy finish of Parmesan make a satisfying dinner with very little prep. There’s no pot of boiling water to manage: packaged potato gnocchi can go straight into the air fryer, where the outsides turn golden while the centers stay tender.

This recipe makes 2 main-dish servings or 4 side servings. Allow approximately 25 minutes total, including preparation, preheating, and 12–16 minutes of cooking per batch. That total assumes the gnocchi fit in a spaced single layer; if they don’t, allow another 12–16 minutes for each additional batch. Treat the cooking times as estimates and use the texture checks below.

Ingredients

  • 1 (16-ounce) package shelf-stable potato gnocchi
  • 1 tablespoon olive oil
  • ¼ teaspoon garlic powder
  • ¼ teaspoon freshly ground black pepper
  • ⅓ cup prepared basil pesto
  • ¼ cup finely grated Parmesan cheese, divided
  • 1 teaspoon fresh lemon juice, optional
  • 1–2 teaspoons warm water, only if needed to loosen the pesto
  • 2 tablespoons torn fresh basil leaves, optional
  • ⅛ teaspoon crushed red pepper flakes, optional
  • Fine salt, to taste, added after cooking

Choose standard shelf-stable potato gnocchi for this method rather than homemade, stuffed, or cauliflower gnocchi. Those products have different moisture levels and may need different handling. You do not need to boil the shelf-stable gnocchi before air-frying.

For the pesto, use a jarred or refrigerated variety you enjoy. The finishing sauce is intentionally modest: start with a light coating rather than treating the gnocchi like pasta swimming in sauce.

How To Make It

  1. Separate and season the gnocchi.

Open the package and gently pull apart any pieces stuck together. Put the gnocchi in a large bowl, leaving behind loose flour from the package. Add the olive oil, garlic powder, and black pepper. Toss until the pieces have a thin, even sheen, working apart any remaining clumps with your fingers. Leave out the salt for now so you can judge the seasoning after adding the pesto and cheese.

  1. Prepare the pesto finish.

Measure the pesto into a separate serving bowl large enough to hold the cooked gnocchi. Stir it thoroughly, then mix in the optional lemon juice. If it is too stiff to coat the gnocchi easily, add warm water 1 teaspoon at a time; stop as soon as it becomes spoonable, not runny. Measure the Parmesan and prepare the basil now. Refrigerated pesto can sit out briefly during preparation; its manufacturer may recommend taking it out about 10 minutes before serving.

  1. Preheat and arrange.

Preheat the air fryer to 390°F (200°C), following your appliance’s directions. Spread the seasoned gnocchi in the basket in a single layer with small gaps between pieces. They should not be piled up. Cook everything together if it fits comfortably; otherwise, leave the remaining seasoned gnocchi in the bowl for another batch.

  1. Air-fry, shaking halfway through.

Cook for an estimated 12–16 minutes, shaking the basket after 5 minutes and again around 9 minutes. Begin checking at 10 minutes, especially with small gnocchi or an air fryer that browns quickly. Look for golden patches and a dry, lightly crisp exterior. Let one piece cool briefly, then bite or cut into it: the middle should be hot and tender, not cool or floury. Continue in 1–2-minute increments as needed. Comparable methods use approximately 12–16 minutes at this temperature, but the endpoint matters more than the timer.

  1. Toss lightly and serve immediately.

Transfer the hot gnocchi to the pesto bowl and fold gently until lightly coated. Add half the Parmesan, toss once more, then divide between plates. Finish with the remaining cheese, optional basil, and red pepper flakes. Taste before adding salt. If cooking additional batches, dress each batch just before serving rather than leaving the first batch sitting in sauce.

Tips

  • Keep the pesto for the finish. This recipe adds it after cooking rather than exposing the basil sauce to the full air-frying cycle. The hot gnocchi provide the warmth; there is no separate sauce-cooking step. Stirring pesto directly into cooked pasta is also the preparation recommended by pesto manufacturers.
  • Use the basket space, not the package size, to decide on batches. Spread the pieces out before committing to one load. If they overlap heavily, remove some. A single layer and occasional shaking are standard features of comparable air-fryer gnocchi methods.
  • Aim for crisp edges, not uniformly dark shells. Check a piece before adding more time. Once the outside is golden and the center is tender, stop; the goal is a pleasant contrast, not a crunchy center. This matches the crisp-outside, tender-inside endpoint used in comparable recipes.
  • Keep additions simple. For this version, try serving the gnocchi over a handful of arugula or alongside sliced tomatoes dressed with lemon. Keep any wet accompaniments beside the gnocchi rather than mixing everything together.

Storage and Reheating

Refrigerate leftovers in a shallow, covered container within 2 hours, or within 1 hour if the surrounding temperature exceeds 90°F (32°C). Use refrigerated leftovers within 3–4 days. If planning ahead, reserve some gnocchi before adding pesto and store the sauce separately.

For reheating, try 350°F (175°C) in a single layer, checking after 3 minutes and allowing roughly 3–6 minutes or longer as needed. Reheat leftovers to 165°F (74°C). Already-dressed gnocchi may not regain their original crispness, so watch closely rather than extending cooking just for more browning.

Have the pesto bowl, cheese, and plates ready before the timer finishes—this is a dish to toss and serve straight away.

Instructions

  1. Separate any stuck gnocchi, leaving loose package flour behind; do not boil. Toss in a large bowl with olive oil, garlic powder, and black pepper until evenly coated, breaking up remaining clumps. Do not add salt yet.
  2. Stir the pesto in a separate serving bowl and mix in the optional lemon juice. If needed, add warm water 1 teaspoon at a time until spoonable, not runny. Measure the Parmesan and prepare the optional basil.
  3. Preheat the air fryer to 390°F according to the appliance directions. Arrange gnocchi in a single layer with small gaps; cook together if they fit comfortably, otherwise reserve the rest for another batch.
  4. Air-fry for 12–16 minutes per batch, shaking after 5 minutes and again around 9 minutes. Begin checking at 10 minutes.
  5. Check for golden patches and a dry, lightly crisp exterior. Let one piece cool briefly, then bite or cut into it: the center should be hot and tender, not cool or floury. Continue in 1–2-minute increments as needed.
  6. Gently fold the hot gnocchi into the pesto, then toss with half the Parmesan. If cooking additional batches, dress each batch just before serving.
  7. Divide between plates and finish with the remaining Parmesan, optional basil, and optional red pepper flakes. Taste before adding salt and serve immediately. Makes 2 main-dish servings or 4 side servings.
