Golden edges, tender centers, and plenty of garlic, Parmesan, and Italian herbs make these air fryer meatballs an easy dinner. Serve them with warm marinara and pasta, tuck them into toasted rolls, or set them out with sauce for dipping.
This recipe makes about 20 meatballs, serving 4. Allow 8–12 minutes of cooking per batch and approximately 30–35 minutes total if everything fits in one spaced single layer. Each additional batch adds roughly 8–12 minutes; basket capacity determines whether you need one.
Ingredients
- 1 pound 85% lean ground beef
- 1/3 cup plain fine dry breadcrumbs
- 1/4 cup whole or 2% milk
- 1 large egg
- 1/4 cup finely grated Parmesan cheese, plus extra for serving
- 2 tablespoons finely chopped fresh flat-leaf parsley
- 2 garlic cloves, finely minced or grated
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon onion powder
- 1/2 teaspoon fine salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon crushed red pepper flakes, optional
- 1 teaspoon olive oil, for lightly greasing the basket
- 1 1/2 cups prepared marinara sauce, optional, for serving
Choose plain breadcrumbs rather than Italian-seasoned ones so the salt and herbs stay predictable. Finely grate the Parmesan so it blends evenly rather than leaving large pieces in the mixture.
How To Make It
- Soften the breadcrumbs. In a large bowl, stir together the breadcrumbs and milk. Let stand for 5 minutes while you mince the garlic, chop the parsley, and measure the remaining ingredients. The mixture should resemble a soft, damp paste, with no loose milk pooling underneath.
- Mix the seasonings before adding the beef. Add the egg, Parmesan, parsley, garlic, oregano, basil, onion powder, salt, black pepper, and optional red pepper flakes to the soaked crumbs. Stir thoroughly with a fork. Add the ground beef and gently fold everything together with your fingers or a sturdy fork, stopping as soon as the seasonings are evenly distributed. Avoid kneading or squeezing the mixture into a dense paste.
- Shape the meatballs and prepare the sauce. Divide the mixture into about 20 portions, roughly 2 tablespoons each, and gently roll into balls about 1 1/2 inches across. Set them on a plate without stacking. Lightly dampen your hands if the mixture sticks. If serving with marinara, measure it into a small saucepan now so it is ready to warm while the meatballs cook.
- Preheat and arrange. Preheat the air fryer to 400°F (204°C) according to its instructions, typically 3–5 minutes. Lightly brush the crisper plate or basket with the olive oil, then arrange the meatballs in a single layer with about 1/2 inch between them. Cook all at once if they fit with that spacing; otherwise, refrigerate the uncooked remainder until the next batch.
- Air-fry, turning gently. Cook for 5 minutes, then use tongs to turn the meatballs carefully. Start checking at 7 minutes, especially with a powerful air fryer or slightly smaller meatballs. Expect approximately 8–12 minutes total per batch, but use temperature rather than the clock to decide when they are ready. Comparable air-fryer methods cook similarly sized meatballs at this temperature in roughly 8–11 minutes.
- Check the centers. Insert an instant-read thermometer sideways into the center of several meatballs, including one of the largest and ones from different areas of the basket. Ground beef must reach 160°F (71°C) before removal. If necessary, continue cooking in 1-minute increments. Browning is a useful texture cue, but neither the crust nor the color inside confirms safe doneness. Transfer cooked meatballs to a clean plate.
- Rest briefly and serve. Let the meatballs rest for about 3 minutes. Meanwhile, warm the marinara over medium-low heat, stirring occasionally. Spoon the sauce over the meatballs or serve it alongside to preserve more of their browned exterior. Finish with extra Parmesan if desired.

Tips
- Keep the mixture gentle. Mix the breadcrumb base thoroughly before the beef goes in, then handle the meat as little as practical. Roll just firmly enough to hold the shape; tightly packed meatballs can turn out dense.
- Make the sizes match. A small scoop helps portion evenly. If a few meatballs are noticeably smaller, check those first and remove them individually when ready rather than waiting for the largest ones.
- Troubleshoot a sticky mixture before adding more crumbs. Slight stickiness is normal. If the mixture will not hold a round shape, refrigerate it for 10–15 minutes before trying again. Add extra breadcrumbs only a tablespoon at a time; too much can make the finished meatballs bready.
- Change the herbs without changing the method. Replace the oregano and basil with 1 1/2 teaspoons salt-free Italian seasoning. For a brighter finish, add chopped fresh basil after cooking. Keep marinara out of the air-fryer basket; warm it separately and combine at serving.
Storage and Reheating
Refrigerate leftovers promptly in shallow, covered containers, within 2 hours of cooking, or within 1 hour when the surrounding temperature exceeds 90°F (32°C). Keep the refrigerator at 40°F (4°C) or below and use the meatballs within 3–4 days.
For longer storage, freeze in meal-size portions, with or without sauce, and label with the date. Aim to use frozen cooked meatballs within 2–3 months for best quality. Thaw overnight in the refrigerator.
Reheat refrigerated meatballs in a covered saucepan with marinara over medium-low heat, stirring gently. Alternatively, air-fry unsauced meatballs at 350°F (175°C), checking after 4 minutes and continuing as needed. With either method, heat the centers to 165°F (74°C). Reheat only the portion you plan to serve, and keep the thermometer handy rather than relying on the timer alone.
