Golden panko crumbs, buttery Buffalo sauce, and a cool, chunky blue cheese dip make these air fryer chicken tenders a satisfying dinner or game-day snack. Serve them with celery and carrots for crunch, and sauce the chicken just before eating.

Makes: 4 servings Estimated time: 20–25 minutes prep, 3–5 minutes preheating, and 10–12 minutes cooking per batch. Allow about 35–45 minutes for one batch or 45–55 minutes if your basket requires two. Cook everything together only if the tenders fit in a spaced single layer.

Ingredients

For the chicken

  • 1½ pounds raw chicken tenderloins, thawed if frozen
  • ½ teaspoon fine sea salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked or sweet paprika
  • ¼ teaspoon freshly ground black pepper
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1½ cups plain panko breadcrumbs
  • 1 tablespoon neutral oil, such as avocado or canola, plus 1 teaspoon for the basket

For the Buffalo sauce

  • ⅓ cup cayenne pepper hot sauce, such as Frank’s RedHot Original—not prepared wing sauce
  • 3 tablespoons unsalted butter
  • 1 teaspoon honey, optional

For the blue cheese dip

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • ⅓ cup crumbled blue cheese, about 1½ ounces
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon garlic powder
  • ⅛ teaspoon freshly ground black pepper
  • 1–2 teaspoons milk, optional, for thinning

For serving

  • 4 celery stalks, cut into sticks
  • 2 medium carrots, peeled and cut into sticks

How To Make It

  1. Make the dip first. Stir together the sour cream, mayonnaise, blue cheese, lemon juice, garlic powder, and pepper. Mash some of the cheese against the bowl with a fork, leaving a few small chunks. Add milk a teaspoon at a time only if you prefer a looser dip. Cover and refrigerate while you prepare the chicken. Cut the celery and carrots now, too.
  1. Prepare the Buffalo sauce. Combine the hot sauce, butter, and optional honey in a small saucepan. Warm over low heat, whisking just until the butter melts and the sauce comes together; set aside off the heat. Reserve this sauce for the cooked chicken rather than using it as a raw-chicken marinade.
  1. Prepare the chicken and breading station. Pat the tenderloins dry. Trim any tough tendon sticking out from the ends with kitchen scissors. Aim for pieces roughly ½–¾ inch thick; gently flatten unusually thick ends. Season with the salt, garlic powder, paprika, and pepper. Put the flour in one shallow dish, beat the eggs and water in another, and mix the panko with the tablespoon of oil in a third.
  1. Bread the tenders. Coat each piece lightly in flour, shaking off the excess. Dip it into the egg, let the excess drip away, then press it into the panko on both sides. Set on a tray without stacking. Use one hand for the flour and crumbs and the other for the egg to keep your fingers from becoming heavily coated. Discard leftover breading mixtures after use, and wash your hands and any surfaces or utensils that touched raw chicken before handling ready-to-eat food.
  1. Preheat and load. Preheat the air fryer to 400°F (205°C) for 3–5 minutes, or according to its instructions. Brush the basket lightly with the remaining teaspoon of oil. Arrange the chicken in one layer with small gaps between pieces. If it will not fit without touching or overlapping, cook in batches and refrigerate the uncooked remainder.
  1. Air-fry, checking early. Cook for an estimated 10–12 minutes per batch, turning carefully after 5 minutes. Start checking thin pieces at 8 minutes rather than waiting for the full cooking time. The coating should look golden and feel crisp; later batches may finish sooner in an already-hot fryer. Insert an instant-read thermometer sideways into the thickest part of each large tender. Remove pieces as they reach 165°F (74°C), giving any underdone pieces another 1–2 minutes before checking again. Color alone cannot confirm doneness.
  1. Sauce and serve. Gently rewarm the Buffalo sauce if necessary, then whisk. Brush a thin layer onto the cooked tenders, or gently turn them in a bowl with a little sauce, adding more only as needed. Serve immediately with the cold blue cheese dip and vegetable sticks. For multiple batches, serve each as it finishes or leave earlier pieces unsauced on a wire rack until ready to eat.

Tips

  • Keep the coating light. Shake off loose flour and let excess egg drain before adding crumbs. Press the panko on firmly rather than building a thick, uneven shell.
  • Choose even-sized chicken. Substitute boneless, skinless chicken breast cut lengthwise into strips of similar thickness. Check the narrow pieces first.
  • Adjust the sauce at the table. For a gentler serving, brush on less Buffalo sauce and offer the rest separately. For more heat, stir ⅛ teaspoon cayenne into the sauce.
  • Protect the crunch. Avoid soaking the tenders in sauce or stacking them while hot. For the crispest serving, brush lightly and offer extra sauce for dipping.

Storage and Reheating

Refrigerate leftover chicken and dip in separate covered containers within 2 hours, or within 1 hour if the temperature is above 90°F (32°C). Keep the refrigerator at 40°F (4°C) or below. Use the chicken within 3–4 days; plan to use the dip within 3 days.

Reheat chicken in a spaced single layer at 350°F (175°C), checking after 4 minutes and allowing roughly 5–8 minutes total. Turn halfway through and continue until the center reaches 165°F (74°C). Already-sauced breading may remain softer than unsauced breading. Keep the dip cold, and add any fresh Buffalo sauce only after reheating.
