Golden, lightly crisp skins give way to tender centers in these whole air-fryer baby potatoes. A little olive oil, garlic, and rosemary keep the seasoning simple, with no peeling, chopping, or parboiling needed. Roast at 400°F (204°C) for about 20–25 minutes, shaking halfway through, until the largest potatoes are easily pierced with a fork.
This recipe makes 4 side-dish servings. Allow about 10 minutes for preparation, 3–5 minutes for preheating, and 20–25 minutes per batch—roughly 35–40 minutes total if everything fits in one spaced single layer. Only cook in batches if your basket cannot accommodate the potatoes without crowding; each additional batch adds approximately 20–25 minutes.
Ingredients
- 1½ pounds fresh baby potatoes, preferably about 1–1¼ inches across and similar in size
- 1½ tablespoons olive oil
- ½ teaspoon fine sea salt
- ½ teaspoon garlic powder
- ½ teaspoon dried rosemary, crushed between your fingers
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley, optional, for finishing
- 1 teaspoon lemon juice, optional, for finishing
Choose small yellow, red, or mixed-color baby potatoes. Yellow potatoes are a good choice for a creamy center, while small red potatoes also work well. Size matters more than color here: a bag containing both marble-size potatoes and much larger ones will not finish evenly. Select similarly sized potatoes for this recipe and save oversized ones for another meal rather than cutting them.
The olive oil should leave a thin coating, not a puddle in the bowl. Garlic powder distributes easily over the skins; the optional parsley and lemon go on after cooking for a fresher finish.
How To Make It
Wash and thoroughly dry the potatoes.
Scrub gently under running water, paying attention to any dirt around the eyes, then pat dry with a clean towel. Leave the skins on and the potatoes whole. Take an extra moment to dry the creases so the oil coats the surface rather than sliding off with the water. There is no need to soak or boil them first.
Season before preheating.
Put the potatoes in a large bowl. Add the olive oil, salt, garlic powder, crushed rosemary, and pepper. Toss thoroughly, scraping the bottom of the bowl so the seasoning is distributed evenly. If using parsley, chop it now and set it aside with the measured lemon juice.
Preheat and arrange.
Preheat the air fryer to 400°F (204°C) according to your appliance’s instructions, generally 3–5 minutes. Carefully add the potatoes to the basket in one layer, leaving small gaps for air circulation. Do not stack them. If they cannot fit comfortably, leave the remaining seasoned potatoes in the bowl for another batch.
Roast, shaking halfway through.
Cook for 10 minutes, then carefully shake the basket to roll the potatoes onto different sides. With a tray-style air fryer, turn them using tongs instead. Continue cooking, making your first doneness check at 18 minutes, particularly if the potatoes are very small. Most small whole baby potatoes will need approximately 20–25 minutes, though size and appliance performance affect the timing.
Check the centers, not just the color.
Pierce one of the largest potatoes through the center with a fork or thin skewer. It should slide in easily without meeting a firm core. Look for browned patches and a lightly crisp skin; whole potatoes will not develop the broad crunchy crust of cut potatoes. If the centers resist, cook in 2–3-minute increments, checking again each time. Remove smaller potatoes as they finish if necessary.
Finish and serve promptly.
Transfer to a serving dish and add the parsley and lemon juice, if using. Taste one carefully—it will be very hot inside—before adding more salt. Serve alongside chicken, fish, beans, or eggs, with sour cream or a spoonful of yogurt at the table if you like.

Tips
- Browning before the centers soften? Reduce the temperature to 375°F (190°C) and continue in short increments until tender. This gives larger potatoes more time to cook through without further darkening the skins.
- Tender but not browned enough? Shake to expose paler sides, then give them another 2–3 minutes at 400°F (204°C). Avoid adding extra oil automatically; first check that the basket is not crowded.
- Keep variations simple. Replace the rosemary with ½ teaspoon dried thyme, or add ¼ teaspoon smoked paprika to the seasoning mixture. For a cheesy finish, toss the hot cooked potatoes with 2 tablespoons finely grated Parmesan.
- Plan around serving time. If cooking multiple batches, spread finished potatoes on an uncovered platter rather than covering them tightly. Return them to the air fryer briefly before serving if they need refreshing; keeping them covered traps steam and softens the skins.
Storage and Reheating
Refrigerate leftovers in a shallow, covered container within 2 hours of cooking, or within 1 hour if the surrounding temperature exceeds 90°F (32°C). Use within 3–4 days. Do not leave them out until completely cold before refrigerating.
To reheat, arrange the refrigerated potatoes in one layer and air-fry at 375°F (190°C). Start checking after 4–5 minutes, then continue as needed until the centers reach 165°F (74°C). The exact time depends on their size and how many you are reheating.
For the best result, remember the two most useful checks: leave room around the potatoes, and pierce the largest one before serving.
