Crisp graham crackers, soft milk chocolate, and a golden, gooey marshmallow make these classic air-fryer s’mores a quick treat without a campfire. Toast the marshmallow-topped crackers first, then add the chocolate and lids while everything is warm. The key prep step is simple: cut the marshmallows and press their sticky sides firmly onto the crackers so they don’t sit loose in the circulating air.
This recipe makes 4 s’mores. Allow about 5 minutes for preparation, 3–4 minutes of cooking per batch, and 1 minute for the assembled sandwiches to settle—approximately 10 minutes total if all four bases fit in one spaced layer. Additional batches add roughly 2–4 minutes each because the air fryer will already be hot. No separate preheating is needed for this method.
Ingredients
- 4 full graham cracker sheets, broken crosswise into 8 squares
- 4 large, regular-size marshmallows, not jumbo or miniature
- 1 milk chocolate bar, about 1.55 ounces, divided into 4 equal portions
Choose intact graham cracker squares for the bottoms; cracked pieces are harder to lift once the marshmallow softens. Set aside the remaining four squares as lids.
A thin milk chocolate bar is the classic choice here. Break each portion into pieces that fit within the cracker’s edges, preferably in one layer rather than a tall stack. Having the chocolate ready before cooking lets you assemble the sandwiches while the marshmallows are still hot enough to soften it.
How To Make It
Prepare the crackers and chocolate.
Arrange four graham cracker squares on a plate or board. Keep the four lids and divided chocolate beside your work area. Have a small, thin spatula ready for lifting the toasted bases; trying to pinch hot crackers out of the basket can break them.
Cut and secure the marshmallows.
With kitchen scissors or a knife, cut each marshmallow crosswise into two squat halves. Put both halves on one bottom cracker, freshly cut sides down, leaving a little space around the edges. Press gently but firmly so the exposed sticky surfaces adhere. Repeat with the remaining bases. Do not substitute loose miniature marshmallows: the cut surfaces are what help anchor the topping against the fan.
Load the unheated air fryer.
Place the four prepared bases directly in the basket in a single layer, leaving approximately ½ inch between them where possible. Keep them flat, without overlapping. If they cannot fit with space between them, cook only what fits and leave the remaining prepared bases on the board. There is no need to split the recipe into batches if everything fits comfortably.
Toast briefly.
Set the air fryer to 350°F (175°C). Check at 2 minutes, then continue in 30-second increments until the marshmallows are puffed, soft, and lightly golden on top, usually about 3–4 minutes from a cold start. A hot subsequent batch may finish sooner. Stop at the texture and color you want rather than waiting for the timer; marshmallow tops can brown before the centers collapse completely.
Add chocolate and close the sandwiches.
Switch off the air fryer and use the spatula to transfer the bases to a plate. Immediately place one portion of chocolate on each hot marshmallow topping, then add a reserved cracker lid. Press just enough to spread the marshmallow toward the edges without squeezing it out. Adding the chocolate after toasting keeps the method simple and lets the hot marshmallow soften it.
Rest briefly, then serve.
Wait about 1 minute before eating. This gives the chocolate time to soften and the filling a chance to cool slightly, though the center may still be hot. If cooking another batch, begin checking it earlier because the basket is already heated. Serve each batch as it is ready rather than holding the first sandwiches while the rest cook.

Tips
- Check adhesion before loading. Each marshmallow half should stay attached when you gently move its cracker. If it slides, press the cut side down again. Don’t balance an uncut marshmallow on top and hope it stays put.
- Aim for golden, not campfire-blackened. These s’mores have toasted marshmallow flavor without the smoky char. Once the tops are golden and the marshmallows yield under the lid, extra cooking mainly risks overbrowning.
- Keep the chocolate thin. A thick chocolate square may remain firm even when the marshmallow is ready. Break it into thinner pieces before starting, or expect a firmer chocolate bite.
- Press lightly. If the filling spills out, use less pressure when adding the lid. A little spreading is useful; flattening the sandwich completely makes it harder to pick up.
- Make one straightforward variation. Substitute the same amount of thin dark chocolate for a less-sweet filling. Keep the cracker size and marshmallow assembly unchanged so the cooking method stays predictable.
Storage and Reheating
These are best assembled just before eating. For a smaller serving, prepare only the number you want and keep the remaining crackers, chocolate, and marshmallows stored separately in sealed packaging.
If a finished s’more remains, let it cool and store it in an airtight container at room temperature to enjoy the next day. Expect a softer cracker and firmer filling. For gentle reheating, microwave one sandwich on a microwave-safe plate for 5 seconds, then check before adding another short burst; stop as soon as the filling softens.
Have the chocolate and top crackers within reach before you start—the short move from toasted marshmallow to finished sandwich is what makes this treat work.
