This Chick-fil-A-style air fryer chicken sandwich is an independent, pickle-brined take on a crispy favorite—not an authentic or affiliated recipe. Air fry the breaded chicken at 380°F (193°C) for about 12–16 minutes, after preheating the air fryer for 3 minutes. Flip halfway through; there’s no need to shake. A short soak in dill pickle brine gives the chicken a tangy start, while fine panko makes a crunchy coating without deep-frying.
Ingredients
For four sandwiches, you’ll need 1 pound boneless, skinless chicken breasts (about 2 breasts), ½ cup dill pickle brine, ¼ cup all-purpose flour, 1 large egg, 1 tablespoon water, and ¾ cup fine panko breadcrumbs. Season the crumbs with ½ teaspoon paprika, ½ teaspoon garlic powder, and ¼ teaspoon black pepper. Have neutral oil spray, 4 sandwich buns, ¼ cup mayonnaise, and about ⅓ cup dill pickle chips ready for cooking and serving. The brine brings saltiness, so taste the finished sandwich before adding more salt.
How To Make It
- Slice each breast horizontally into two cutlets. If needed, gently pound thicker areas so all four pieces are about ½ inch thick. Pour the pickle brine into a covered container, add the chicken, and refrigerate for 30 minutes. Discard the used brine.
- Pat the cutlets dry with paper towels. Put the flour in one shallow dish. Beat the egg with the water in a second dish, and combine the panko and seasonings in a third. Coat each cutlet in flour, then egg, then crumbs, pressing gently so the coating sticks.
- Preheat the air fryer to 380°F (193°C) for 3 minutes. Spray both sides of the chicken with neutral oil, covering any visibly dry crumbs. Arrange cutlets in one layer with space between them; cook in batches if necessary. Don’t add loose parchment or an empty liner.
- Air fry for 12–16 minutes, flipping halfway through. Check the thickest part of each cutlet with a food thermometer: it must reach 165°F (74°C) before serving. Add time as needed. Spread the buns with mayonnaise and add chicken and pickle chips.
Tips
Keep the pieces even: Thin, similarly sized cutlets cook more predictably than whole breasts. Air fryers vary, so use the time as a guide rather than relying on browning alone. If crumbs look floury after the flip, give those spots another light spray of oil.
Serve them crisp: Let the cooked cutlets sit for about 3 minutes while you prepare the buns. This is optional for texture, not a required safety rest. Assemble just before eating so the coating stays crunchy.
Grab the pickles and enjoy a satisfying homemade sandwich!
