Smoky shrimp, sweet peppers, and tender onions tucked into warm tortillas make a colorful, lime-bright dinner. These air fryer shrimp fajitas cook in two stages: vegetables first, then shrimp, so you can get browned edges without overcooking the seafood.
Makes: 4 servings, about 8 small fajitas Estimated time: 15 minutes prep, 3–5 minutes preheating, and 12–18 minutes cooking; about 30–40 minutes total. This assumes the vegetables fit in one spaced layer and the shrimp fit in one separate layer. If either needs additional batches, allow 8–12 minutes per vegetable batch or 4–6 minutes per shrimp batch.
Ingredients
For the fajitas
- 1 pound raw large shrimp, preferably 21–25 count per pound, peeled, deveined, and tails removed
- 2 medium bell peppers, preferably red and yellow, cut into ¼-inch-wide strips
- 1 medium yellow or red onion, cut into ¼-inch-wide strips
- 2 tablespoons olive oil, divided
- 2 teaspoons mild chili powder, the American-style seasoning blend
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- ½ teaspoon garlic powder
- ¾ teaspoon fine salt
- ¼ teaspoon freshly ground black pepper
- ⅛ teaspoon cayenne pepper, optional
- 1 tablespoon fresh lime juice, plus lime wedges for serving
- 8 small flour or corn tortillas, about 6 inches across
- 2 tablespoons chopped cilantro, optional
For the optional lime crema
- ¼ cup sour cream or plain Greek yogurt
- 2 teaspoons fresh lime juice
- 1–2 teaspoons water, as needed
- ⅛ teaspoon fine salt
How To Make It
- Prepare the shrimp and vegetables.
If using frozen shrimp, thaw them overnight in the refrigerator, or place them in a sealed bag in cold water for quicker thawing. Drain and pat thoroughly dry with paper towels. Remove any remaining shells or tails. Slice the peppers and onion into similarly sized strips, separating the onion layers so they cook evenly. Keep raw shrimp and their utensils separate from ready-to-eat toppings.
- Mix the seasoning and crema before preheating.
Combine the chili powder, cumin, smoked paprika, garlic powder, salt, black pepper, and optional cayenne in a small bowl. In a separate bowl, stir together the crema ingredients, adding just enough water to make a spoonable sauce. Refrigerate until serving. Set out your tortillas, lime wedges, and any other toppings now.
- Season everything separately.
Toss the peppers and onion with 1 tablespoon olive oil and half the seasoning mixture. In another bowl, toss the shrimp with the remaining tablespoon of oil and seasoning. Refrigerate the shrimp while the vegetables cook. Save the tablespoon of lime juice for finishing rather than adding it to the raw shrimp.
- Preheat and cook the vegetables.
Preheat the air fryer to 400°F (204°C) for 3–5 minutes, or follow your appliance’s preheating instructions. Spread the vegetables across the basket or crisper plate in a loose, spaced layer. Divide them only if they would otherwise form a crowded pile. Cook for 8–12 minutes, tossing after 4 minutes and checking at 8 minutes. Look for softened onions, flexible pepper strips, and a few browned edges. Transfer to a clean serving bowl and cover loosely. Giving vegetables their own cooking stage accommodates their longer cooking time.
- Cook the shrimp, checking early.
Arrange the shrimp in a single layer with small gaps between them. Air fry at 400°F (204°C) for approximately 4–6 minutes, turning after 2–3 minutes. Start checking at 3 minutes, particularly if your shrimp are smaller. Use a thin-tip instant-read thermometer inserted sideways into the thickest part of several shrimp; they should reach 145°F (63°C). The flesh should also be pearly and opaque, without a translucent center. Remove individual shrimp as they finish rather than waiting for every piece to cook at the same rate.
- Warm, finish, and assemble.
While the shrimp cook, warm tortillas in a dry skillet over medium heat, about 15–30 seconds per side, then wrap in a clean kitchen towel. Add the cooked shrimp to the vegetables and gently toss with 1 tablespoon lime juice and the optional cilantro. Spoon the filling down the center of each tortilla, drizzle with crema, and fold the sides inward. Serve immediately with lime wedges.

Tips
- Cut vegetables into strips, not chunks. The narrow strips fit more comfortably inside tortillas. Trim especially long pepper strips in half so they are easier to bite through.
- Let basket space determine batches. The vegetables and shrimp are separate cooking stages, not a requirement to divide everything into two equal batches. If you have a dual-basket model, you can cook them separately at the same time, starting the shrimp later.
- Use the basket directly. For this recipe, skip a solid liner and let excess moisture drain beneath the crisper plate. Dry the shrimp well before seasoning, and avoid pouring thawing liquid into the basket.
- Adjust heat at the table. Leave out the cayenne for a mild filling and offer hot sauce or sliced jalapeños separately. For a different serving option, spoon the filling over rice or shredded lettuce and add avocado.
- Keep the finish light. Start with the measured lime juice, taste, and offer extra wedges rather than soaking the filling. Use a slotted spoon if juices collect in the serving bowl.
Storage and Reheating
Refrigerate leftover filling in shallow, airtight containers within 2 hours, or within 1 hour if the surrounding temperature is above 90°F (32°C). Keep tortillas, crema, and fresh toppings separate. Store the filling at 40°F (4°C) or below and use within 3–4 days.
For reheating, place a serving of filling in a microwave-safe dish with a teaspoon of water and cover loosely. Heat in short intervals, stirring between them, until it reaches 165°F (74°C) throughout. Check several places with a thermometer rather than relying on a fixed reheating time.
Warm fresh tortillas separately, then assemble just before eating so they do not sit soaking in the filling’s juices.
