Juicy chicken thighs, browned edges, and warm garlic-herb butter make a satisfying dinner without breading or a long marinade. Dried thyme and oregano season the chicken before cooking; fresh garlic and parsley go into a buttery finish that keeps their flavor front and center.
Plan on 12–16 minutes per batch at 400°F (205°C), checking early at 10 minutes. This recipe serves 4 and takes approximately 30–35 minutes if all the chicken fits in one spaced layer. Allow another 12–16 minutes for each additional batch your basket requires. Comparable boneless-thigh methods use roughly 14–15 minutes at this temperature, but thickness and air-fryer performance affect the timing.
Ingredients
- 1½ pounds boneless, skinless chicken thighs, about 4–6 thighs
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- ¾ teaspoon fine sea salt
- ½ teaspoon freshly ground black pepper
For the garlic-herb butter:
- 1 tablespoon unsalted butter
- 3 medium garlic cloves, finely minced
- 2 tablespoons finely chopped fresh flat-leaf parsley
Choose thighs of similar thickness when possible. This method is written for fully thawed, boneless, skinless chicken—not bone-in pieces or thighs still frozen in the middle.
How To Make It
Prepare the chicken.
Unfold each thigh so it lies open rather than remaining tucked into a compact bundle. Pat both sides thoroughly dry with paper towels. Trim off loose, dangling pieces of fat, but there is no need to remove every small seam. Keep the thighs whole; cutting them into small pieces would change the cooking time.
Season evenly.
In a large bowl, stir together the olive oil, garlic powder, thyme, oregano, salt, and pepper. Add the chicken and turn to coat both sides, working a little seasoning into the folds. Spread each thigh open again after coating. The surface should look lightly coated, not buried beneath clumps of dried herbs.
Prepare the finishing butter before preheating.
Melt the butter in a small saucepan over low heat. Add the minced garlic and cook gently for about 1–2 minutes, stirring, just until fragrant and slightly softened. Do not let it turn dark brown. Remove from the heat and stir in the parsley. Set aside, keeping this mixture separate from the raw chicken and its utensils.
Preheat and arrange.
Preheat the air fryer to 400°F (205°C), following your appliance’s instructions; allow approximately 3–5 minutes. Arrange the thighs flat in the basket with their smoother sides facing down. Leave a little space between pieces, with no overlapping or folded-under portions. Cook everything together if it fits this way; otherwise, cook only as many batches as necessary. A single-layer arrangement is also used in comparable air-fryer thigh recipes.
Air-fry, flip, and check early.
Cook for 6 minutes, then turn the thighs over with tongs. Begin checking their temperature at 10 minutes total, especially if some pieces are small or thin. Most batches will need approximately 12–16 minutes total; unusually thick thighs may need longer. Continue in 1–2-minute increments as necessary. Insert an instant-read thermometer sideways into the thickest part of each thigh, keeping the probe away from the basket. Every piece must reach 165°F (74°C) before removal; browned edges alone do not establish doneness. Transfer smaller pieces to a clean plate as they finish rather than waiting for the largest one.
Finish and rest.
Spoon the garlic-parsley butter over the hot chicken and let it rest for 5 minutes before slicing. If the butter has solidified, warm it briefly over low heat first. Spoon any juices from the resting plate over the sliced thighs. Serve with rice, mashed potatoes, or a green salad—something simple that leaves room for the garlic and herbs.

Tips
- Open the folds rather than pounding every thigh. Boneless thighs often have thin flaps wrapped around a thicker center. Laying them flat gives you a more even starting point. If one piece is dramatically thicker than the others, check it separately rather than extending the cooking time for the entire batch.
- Use two forms of garlic deliberately. Garlic powder provides an even coating, while gently warmed fresh garlic gives the finishing butter a fuller aroma. Keeping minced garlic out of the basket also avoids scattering loose pieces around the chicken.
- Expect browned edges, not a breaded crust. These thighs have no flour, crumbs, or skin. Aim for a lightly browned exterior and juicy meat rather than trying to cook them until the whole surface becomes crunchy.
- Keep the herbs flexible. Substitute 2 teaspoons of salt-free Italian seasoning for the thyme and oregano, or replace the parsley with 1 tablespoon chopped fresh chives. Avoid adding a salty seasoning blend without reducing the measured salt.
- Let the thermometer override the timer. Remove individual thighs once they reach the safe endpoint. Do not give already-cooked chicken extra minutes simply because the estimated cooking range has not elapsed.
Storage and Reheating
Refrigerate leftovers in a shallow, covered container within 2 hours, or within 1 hour if the surrounding temperature exceeds 90°F (32°C). Keep refrigerated chicken for 3–4 days. Freeze portions with their juices for up to 3 months for convenient future meals.
To reheat, place thawed thighs in the air fryer at 350°F (175°C). Start checking after 4 minutes and continue in short increments until the center reaches 165°F (74°C). Alternatively, microwave sliced chicken in a covered, vented dish with a small splash of water to help retain moisture. Reheated leftovers should reach that same measured endpoint.
Keep leftover thighs whole until you need them, and slice only the portion you plan to serve.
