Crispy Panko Air Fryer Chicken Tenders

These air fryer chicken tenders have a craggy, seasoned panko crust and a juicy center—just right for dipping into honey mustard. Fresh tenderloins keep the prep straightforward, while a light flour coating helps the breading stay put.

Makes 4 servings. Allow about 20 minutes for prep, 3–5 minutes to preheat, and 8–12 minutes per batch. Estimated total time is 35–40 minutes if everything fits in one spaced layer, or 45–50 minutes if your basket requires two batches. Smaller baskets may need more.

Ingredients

  • 1½ pounds fresh boneless, skinless chicken tenderloins, thawed if previously frozen
  • ¾ teaspoon fine sea salt, divided
  • ½ teaspoon freshly ground black pepper, divided
  • ⅓ cup all-purpose flour
  • 2 large eggs
  • 1 tablespoon water
  • 1½ cups plain panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 2 tablespoons olive oil or avocado oil, plus a little for greasing the basket

For an optional honey-mustard dip:

  • ¼ cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon lemon juice

How To Make It

Prepare the dip and chicken.

Stir the dip ingredients together and refrigerate until serving. Pat the tenderloins thoroughly dry with paper towels. Trim any loose fat. If a firm white tendon protrudes from a tenderloin, snip off the exposed end with kitchen shears; there is no need to pull out the entire tendon if doing so tears the meat. Season the chicken with ½ teaspoon salt and ¼ teaspoon pepper.

Set up three shallow dishes.

Put the flour in the first dish. Beat the eggs and water together in the second. In the third, combine the panko, paprika, garlic powder, onion powder, remaining ¼ teaspoon salt, and remaining ¼ teaspoon pepper. Drizzle the 2 tablespoons oil over the panko, then toss and rub gently with your fingertips until the crumbs are evenly moistened rather than clumped.

Bread the tenderloins.

Working with one piece at a time, dust the chicken lightly with flour and shake off the excess. Dip it into the egg, letting extra egg drip back into the dish, then press it into the panko on both sides. Aim for an even coating, not a thick shell. Set the breaded pieces on a tray. Keeping one hand for the flour and crumbs and the other for the egg helps prevent breaded fingers. Discard leftover breading ingredients after coating the raw chicken.

Preheat and load.

Once all the chicken is breaded, preheat the air fryer to 400°F (204°C) for 3–5 minutes, or follow your appliance’s preheating instructions. Lightly grease the basket or crisper plate. Arrange the tenderloins flat in a single layer with small gaps between them. Cook everything together if it fits this way; otherwise, refrigerate the waiting pieces and cook only as many batches as necessary. Overlapping chicken will interfere with crisping.

Air-fry, turning once.

Cook for 4–5 minutes, then carefully turn each tender with tongs, gripping gently so the coating stays attached. Begin checking smaller pieces at 7–8 minutes total. Most tenderloins will need approximately 8–12 minutes per batch, depending on thickness and the air fryer. Treat that range as a guide rather than a guarantee.

Check the center before serving.

Insert an instant-read thermometer horizontally into the thickest part of each tenderloin, keeping the probe tip in the meat rather than the crust. The chicken must reach 165°F (74°C) before removal. Take out finished pieces individually and continue cooking thicker ones in 1-minute increments. A golden crust is welcome, but color alone cannot confirm that chicken is safe to eat.

Rest briefly and serve.

Transfer the cooked tenders to a clean wire rack for about 2 minutes, keeping them separate rather than piled together. Serve with the honey-mustard dip, slaw, a green salad, or roasted vegetables. If cooking another batch, brush away loose browned crumbs once it is safe to do so, and start checking that batch early—the air fryer is already thoroughly hot.

Tips

  • Choose similar-size tenderloins. Keep these as plump tenderloins rather than pounding them into thin cutlets. If the package contains noticeably different sizes, group similar pieces together when loading the basket so checking doneness is easier.
  • Press on the crumbs without crushing the chicken. Bare patches often start with wet chicken, excess flour, or dripping egg. Dry the meat well, shake off loose flour, and let excess egg drain before adding the panko. Press just firmly enough to anchor the crumbs.
  • Watch browning as well as temperature. If the coating becomes deeply browned while the center is still underdone, reduce the air fryer to 375°F (190°C) and continue in short increments. Conversely, do not keep fully cooked chicken in the fryer simply to chase a darker crust.
  • Keep variations simple. For gentle heat, add ¼ teaspoon cayenne to the panko. Use smoked paprika instead of sweet paprika for a smoky version. Serve hot sauce alongside rather than tossing the whole batch in it if you want to preserve the crunchy coating.

Storage and Reheating

Refrigerate leftovers in a shallow, covered container within 2 hours of cooking, or within 1 hour if the surrounding temperature exceeds 90°F (32°C). Keep refrigerated for 3–4 days. For longer storage, freeze the cooked tenders separately on a tray, then transfer to a freezer bag; use within 2–3 months for best texture.

To reheat, arrange refrigerated tenders in a single layer and air-fry at 350°F (175°C), checking after 4 minutes and adding time as needed. Frozen cooked tenders will take longer. In either case, check that the centers reach 165°F (74°C). Reheat only what you plan to eat, and keep the dip on the side until serving.

Instructions

  1. If making the dip, stir together the mayonnaise, Dijon mustard, honey and lemon juice; refrigerate until serving.
  2. Pat the chicken thoroughly dry, trim loose fat and snip off any exposed tendon ends. Season with ½ teaspoon salt and ¼ teaspoon pepper.
  3. Set up three shallow dishes: flour in the first; eggs beaten with water in the second; panko, paprika, garlic powder, onion powder, remaining ¼ teaspoon salt and remaining ¼ teaspoon pepper in the third. Toss and gently rub 2 tablespoons oil into the panko until evenly moistened.
  4. Lightly coat each tenderloin in flour, shaking off excess; dip in egg, letting excess drip off; then press into panko on both sides. Place on a tray and discard leftover breading ingredients.
  5. After breading all the chicken, preheat the air fryer to 400°F for 3–5 minutes, or follow appliance instructions. Lightly grease the basket and arrange chicken flat in one layer with gaps. Cook together if it fits; otherwise refrigerate waiting pieces and cook as many batches as needed.
  6. Air-fry for 4–5 minutes, then gently turn with tongs. Begin checking smaller pieces at 7–8 minutes total; most tenders need 8–12 minutes per batch.
  7. Insert an instant-read thermometer horizontally into the thickest part of each tenderloin, with the tip in the meat, not the crust. Remove each piece only when it reaches 165°F; cook thicker pieces in 1-minute increments until done.
  8. Rest on a clean wire rack, keeping pieces separate, for about 2 minutes; serve with the optional dip. Before another batch, safely brush away loose browned crumbs and begin checking that batch early.
